The healthy lifestyle, the rise of plant-based diets, and the obsession with low-carb foods have made many under-accepted vegetables like cauliflower a culinary trend.

Cauliflower belongs to the ‘brassicaceae’ family, of which many of its members such as cabbage, broccoli or romanescu are considered ‘superfoods’. Do you want to know why?

Cauliflower properties:

Low in calories and rich in fiber: For every 100 grams there are 25 calories and 3 grams of fiber, which is a great ratio to help maintain weight and promote intestinal transit.

Rich in Choline: This essential nutrient stimulates brain cells and is associated with the prevention of Alzheimer’s.

An excellent nutritional profile: cauliflower is rich in potassium, folic acid, vitamins C and K (improves bone health and protects against osteoporosis).

Rich in antioxidants: it has a large amount of glucosinolates and isothiocyanates, two antioxidants with a high capacity to fight against different types of cancer and delays aging.

Good for the digestive system: it’s high fiber and sulfate content helps to protect the stomach walls and prevents bacteria such as Helicobacter pylori from appearing.

Versatility in the kitchen:

The last wonderful thing about cauliflower is the ability to transform it into gnocchi, pizza base, fake rice, hummus, burgers …

In most cases this vegetable can be used as a healthy substitute for carbohydrates such as rice or flour. But, today I bring you a recipe that lets you enjoy the extraordinary flavor of cauliflower in a much simpler way: baked and topped with a delicious almond sauce. I promise you that since I discovered this recipe my perception of cauliflower has completely changed!

Baked Cauliflower

Ingredientes

  • 1 medium cauliflower
  • 2 tbsp Almond Cream
  • 1/2 squeezed lemon
  • 2 garlic cloves 
  • fresh coriander
  • extra virgin olive oil
  • Salt
  • Pepper

Elaboración paso a paso

  1. Wash the cauliflower well by putting it under the tap.

  2. Preheat the oven, at maximum power, and in grill mode.

  3. Bring the whole cauliflower to a boil, about 10 minutes. Turn it over so that it is done well on both sides.

  4. Place the cauliflower on a baking sheet and coat with olive oil. It is important that it is completely soaked.

  5. Add the finely chopped garlic, salt and pepper. Massage the cauliflower very well so that it is fully covered and can get the most flavor.

  6. Bake the cauliflower for 5-10 minutes, or until lightly golden on top.

The almond sauce:

  1. Mix two tablespoons of almond cream and a squeezed lemon, add salt and water (to taste), until obtaining a liquid texture.

  2. Serve the cauliflower, adding the almond sauce on top and, finally, the coriander.

Chef's tip: If you want, you can leave the cauliflower stems: they are edible, they are full of nutrients and they are also delicious!
