Fish and nuts are the perfect combination, if you can find the right recipe. Might we suggest this Crunchy Salmon? It’s not too labor-intensive and the outcome is surprising both in it’s texture and flavor. Salmon which is part of the blue fish group, contains Omega 3 which is good for the heart and circulatory system. Almonds are very fulfilling, and contain antioxidants which help to reduce blood glucose levels, something vital for people with diabetes. This Crunchy Salmon Dish is gluten free and great for something to eat in the middle of the day, or to surprise friends coming over for dinner later.
Crunchy Salmon in Almond Sauce
- 400 gr fresh salmon
- 150 gr raw almonds
- 1 egg
- Unrefined Sea Salt
- Freshly Ground Black Pepper
For the Almond Sauce
- 1/4 cup organic Almond Cream
- 25 gr butter
- 170 ml milk
- 25 gr ground Almond Flour
- pinch Nutmeg
- Ground Black Pepper
- Salt to taste
- 4 ml Soy Sauce or Tamari Sauce (Tamari Sauce is Gluten-Free)
- 1 ml rice vinegar
- 1 tbsp Extra Virgin Olive Oil
Elaboración paso a paso
To make your Salmon crispy start by preheating the oven to 180ºC; Season the Salmon fillets and put aside.
With a food processor (or blender) chop the raw almonds into pieces leaving some bigger ones. Add a pinch of Salt and Pepper to the chopped Almonds, and Añade una pizca de sal y pimienta a la almendra. Lay them out on a tray in order to coat the Salmon with them.
For the batter, first beat the egg and then dip the Salmon Fillets into the egg mixture then cover the Salmon with the Almonds you have laid out on the tray.
Put the Salmon Fillets on a baking sheet and bake for 20 minutes, until the almonds are toasted.
For the sauce, put the butter, and extra virgin olive oil together in a saucepan and let melt over low heat
Add in the milk, ground almonds, freshly grated nutmeg, freshly ground black pepper, salt, almond cream, soy sauce, and rice vinegar.
Bring to a boil, stirring occasionally, and when it boils, stop stirring, lower the heat and let it sit to thicken. Then pour however much you like on top of your Salmon Fillet.

Chef’s Tip: Store the leftover sauce in the fridge, that way it doesn’t sit too long and you can use it in other recipes.
