HEALTHY CHRISTMAS FUDGE

The holidays are quickly approaching and I’m sure many of you have already started to celebrate and meet with friends and family. This Friday I will be doing the same and I plan to bring one (or maybe both) of these fudge recipes to enjoy after our meal.

Chocolate Fudge with Nuts

Ingredientes

  • 200 gr of dark chocolate 100% ( or at least 80% pure) 
  • 25 gr of pure cacao butter or regular butter
  • 50 gr of butter 
  • Nuts (hazelnut, pistachios, almonds, macadamia)
  • Cacao shavings 

Elaboración paso a paso

  1. The first thing is to cut the chocolate into pieces and put it in a small saucepan with the cacao butter and regular butter.

  2. Put the butter and chocolate into a pot on low heat and let it start to blend and melt. Make sure to keep a close eye on this so that your chocolate doesn’t burn. If you’re worried you can place a heat-safe dish on top of a small pot with boiling water. That way it’s less likely to burn. 

  3. Toast your nuts in a pan if you buy them raw.

  4. Take a rectangular silicone mold and add the toasted nuts to the bottom then pour the melted chocolate mixture into the mold covering the nuts. 

  5. Next, stick it in the fridge or freezer and let it cool and solidify. That’s it!

Coconut and Date Fudge

Ingredientes

  • 300 gr of skinless almonds
  • 250 gr of dates (check that they don’t have any added sugar)
  • Himalayan Salt 
  • Shredded coconut 
  • 3 tbsp of coconut oil 

Elaboración paso a paso

  1. Add the dates, almonds, 4 tbsp of shredded coconut, and a pinch of Himalayan salt to a mincer.

  2. Once everything is chopped, start to knead it together with your hand, forming a ball. 

  3. Next, get a silicone mold and flatten out the fudge to the shape of the mold. Using silicone will make it easier to remove the fudge later.

  4. Sprinkle on top some of the leftover shredded coconut as a topping if you’d like.

  5. Lastly, let it cool in the fridge or freezer and become hard. Remove it from the molding when you’re ready to serve.
