Did you know that mango is one of the most consumed fruits in the world thanks to its flavor and nutritional benefits? Today I’d like to show you how to take this popular fruit and turn it into a delicious mousse made with coconut milk. In case you didn’t know, coconut milk, besides being very enjoyable, contains a healthy fat known as lauric acid, which is easily absorbed in the body and used as a source of energy.
Mango and Coconut Mousse
- 300 gr of mango
- 4 flavorless sheets of gelatin
- 1/2 a glass of lukewarm water
- 50 ml of creamy coconut milk (optional)
Elaboración paso a paso
Place the flavorless gelatin sheets on a plate and cover with lukewarm water and let soak for 10 minutes.
Don’t forget to wash your mango well.
Then chop it up a little so that it fits nicely in your blender. Add the 50ml of water and blend everything well until no chunks are left.
Next, in a small pot take the blended mango and mix it together with the coconut milk over medium heat.
Stir slowly, until it looks like it is starting to boil.
Turn off the heat and add in your gelatin.
Stir well and let rest until it cools to room temperature.
Then you will want to scoop this into the glasses that you would like to use to serve your mousse in and then place them in the fridge.
When you are ready to serve, feel free to pair your mouse with some coconut milk or whipped cream, or even yogurt on top. That is, if you eat dairy.
